Maple Lemonade

INGREDIENTS

  • 2 quarts water
  • 10 oz Branon Family Maple Syrup (Robust)*
  • 10 oz lemon juice from concentrate (Real Lemon works well and there are some great organic concentrates also available in the frozen food aisle)
  • Ice

DIRECTIONS

Combine water, syrup and lemon juice in a glass pitcher. Ice as needed.

 

NOTES

  • To turn this into a full-on adult beverage, add 1.5 ounces of vodka to a glass of maple lemonade.
  • While any maple syrup grade will work, Robust contributes a stronger flavor.

Wild Salmon and Potato Burger

BRANON MAPLE TERIYAKI GLAZE

PREP: 5 minutes | COOK: 30 minutes | SERVES: 4

These salmon burgers are a wonderful way to enjoy Branon’s Family Maple Syrup in way that most people don’t normally think about. The rich, deep flavor of our organic maple syrup adds just the right amount of healthy sweetness to these delicious burgers.

SALMON BURGER

  • 1 medium gold potato, peeled and finely diced 1 tablespoon olive oil
  • 1 medium sweet onion finely diced
  • 1 rib of celery finely diced
  • salt and pepper to taste
  • 1 teaspoon chopped thyme
  • 1 pound wild salmon, coarsely chopped 1/3 cup mayonnaise
  • 1/3 cup plus 1 cup panko bread crumbs 2 tablespoons olive oil
  • 2 tablespoons butte

DIRECTIONS

  1. Boil potatoes in 2 cups of boiling water until soft, about 10 minutes. Drain water and reserve potatoes.
  2. Heat oil in a skillet until it just begins to smoke. Cook onion and celery over medium heat until soft, about 5 minutes. Add potatoes and continue cooking for 2 to 3 minutes. Season with salt, pepper, and thyme. Remove from heat and allow to cool to room temperature.
  3. Stir in salmon, mayonnaise, and 1/3 cup panko into the onion mixture.
  4. Sprinkle the remaining panko onto a cookie sheet. If you have a large cookie cutter use it to shape the salmon mixture into 4 thick patties. If you do not have one just shape by hand. Press both sides of the patties into the panko.
  5. Heat olive oil and butter in a skillet over medium-high heat. Cook the patties until golden brown on both sides, about 4 - 5 minutes per side

MAPLE TERIYAKI SAUCE

  • 1/4 cup soy sauce
  • 1/4 cup Branon Family Maple Syrup
  • 1/4 cup sherry or chicken stock
  • 1/4 cup mirin
  • 1/4 cup hoisin sauce
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons cornstarch moistened in 1 tablespoon of water

MAPLE TERIYAKI SAUCE DIRECTIONS

  1. Combine soy, syrup, sherry, mirin, hoisin, and vinegar in a medium sized pot and bring to a boil. Whisk in cornstarch and cook until thickened. Store leftover sauce in the refrigerator.
  2. To serve the salmon burgers, either serve on a hamburger buns with lettuce, tomato, and whatever other fixings you enjoy or over a green salad.

NOTES

This maple teriyaki sauce is good on everything. Try brushing on ribs, used in quick stir fry, or even as a base for a salad dressing.
You can make the salmon cakes the day before you cook them. Just be sure to store on top of the panko in your refrigerator.




Apple Pie

INGREDIENTS

6 c Sliced Apples/peeled
¾ c Branon Maple Sugar
2 tbs flour
¾ tsp Cinnamon
¼ tsp sea salt
¼ tsp Nutmeg
Dash lemon juice

STEPS

  • In a large bowl mix all ingredients well.
  • Set oven to 425 F
  • Line a 9” pie plate with a pie crust, spoon apple mixture into pie plate. Trim sides to the pie plate size.
  • Cover the top of the apple mixture with the second pie crust. Tuck any extra crust under the bottom crust and press around the edges. Bake 15 minutes and cover crust edges with tin foil. Return to oven for 30 minutes or until apples are cooked.
  • Serve with vanilla ice cream and a small amount of Branon Family Maple Syrup.


Apple Goodie

Apple Goodie

INGREDIENTS

¾ c Branon Maple Sugar
1 tbs Flour
1/8 tsp Cinnamon
¼ tsp sea salt
4 cups sliced apples

STEPS

  • Mix: sugar, flour, salt, and Cinnamon together.
  • Combine with apples
  • Mix well and place in the bottom of a greased casserole. (8x8)

TOPPING

½ c quick oatmeal(small flakes)
¼ c butter
½ c Maple Sugar
1/8 tsp Baking Soda
½ c flour
1/8 tsp Baking Powder

Melt butter, mix all ingredients together and sprinkle crumb topping over the apple mixture.

Bake 375 30-40 min

Serve with Vanilla ice cream and a drizzle of Branon Family Maple Syrup.



Chipotle Maple Seasoned Steak

Maple Chipotle & Maple Seasoned Steak, Shrimp & Scallops with a side of Elote’ (Mexican Street corn)

Rub your seasoning into the Steak, both sides and place on grill. Cook the meat to the right doneness of your liking.

Use a small plastic bag to toss your scallops or shrimp into the seasonings and place on the grill on Medium heat.

Grill the scallops & shrimp for about 10-15 min turning them over once or twice to get a nice light brown coating on them.


Elote’ – Mexican Street corn

INGREDIENTS

4 ears sweet corn
1 tablespoon Mayonnaise
½ teaspoon Branon Family Maple Chipotle Rub
¼ cup freshly grated Cotija Cheese
Chopped Cilantro for garnish or taste (optional)

STEPS

  • Grill or broil the sweet corn until done.
  • De-cob (cut the corn off the cob) Place in the mixing bowl. Allow to cool.
  • Add mayo to corn, mix with fork, add Branon Family Maple Orchards Chipotle Rub and Cotija cheese mix well.
  • Top with Cilantro – Allow to cool. Can be kept for days.
Maple Fruit Pizza

Maple Fruit Pizza

INGREDIENTS

1 Puff Pastry Shell – can use a different crust if wanted
1 8 ½ oz Cream Cheese (room temperature)
2 tbsp Heavy Cream (optional)
¼ c+ Branon Family’s Organic Maple Syrup – robust
¼ tsp pure vanilla
1 ½ tbsp Branon Family’s Organic Maple Sugar

STEPS

  • Bake pastry shell as directed on – parchment paper works great.
  • After shell cools a little press top down so it collapses.
  • If there is pastry crumbling from the top, pick up carefully and shake off.
  • With an electric mixer beat together - cream cheese, heavy cream, vanilla, and Maple syrup, if the texture is not creamy add more maple syrup till the cream cheese is soft and spreadable.
  • Spread over cooled crust. Top off with your favorite berries. Keep in refrigerator.

Caution! It won’t last long!

Maple topped Strawberries

Maple Cream Cheese topped Strawberries

Cut the greens of the top of the strawberries leaving a flat surface for berries to stand straight. With a plastic spatula swirl the cream on top of strawberries, sprinkle with the maple sugar.

Maple dipped apples

Using the same cream prepared above place in a container. Cut up hard apples, our favorites are Granny Smith & Pink Lady’s you can also enjoy green grapes with the dip.

Buffalo Wings

Grilled Maple Buffalo Wings

INGREDIENTS

1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1-2 teaspoons ground cayenne pepper
or 1-2 teaspoon Maple Chipotle Rub
3 pounds chicken wings
1 bottle Maple Buffalo Sauce

STEPS

  • Preheat grill to about 350 degrees
  • Combine salt, pepper, cayenne or chipotle rub in a small bowl
  • Toss the wings with the dry ingredient blend, making sure each wing in seasoned
  • Place seasoned wings on grill, keeping them tightly crowded together to increase moistness.* Grill, flipping every 5-7 minutes for abut 20 minutes or until wings are properly cooked
  • Remove wings from grill and place in large mixing bowl. Pour half of bottle of Maple Buffalo Sauce over wings, making sure each wing is properly coated
  • Return coated wings to grill for 5-6 minutes, turning frequently
  • Remove wings, apply more Maple Buffalo Sauce to taste

SERVING

Serve with ranch or bleu cheese dressing, carrot and celery sticks

NOTE

* For additional moistness, brine wings for 2-3 hours before grilling in a mixture of water, salt and cayenne pepper.

Air Fried Maple Buffalo Wings

INGREDIENTS

Nonstick cooking spray for air fryer basket
1 pound chicken wings split into flats and drumettes
1 tablespoon olive oil
1 tsp Branon Family Maple Orchards Maple Chipotle Rub
Branon Family Maple Orchards Maple Buffalo Sauce for coating
Ranch or blue cheese dressing for serving

STEPS

  • Preheat the air fryer to 380°F. When heated, spray the basket with cooking spray.
  • Pat the chicken wings dry. Then transfer them to a large bowl. Toss the wings with olive oil, and Maple Chipotle Rub.
  • Place the chicken wings in the air fryer so they are not touching. Cook for 10 minutes, then increase the temperature to 400°F, and cook until crisp and golden, about 6 more minutes.
  • Remove wings from air fryer and put into large bowl, top wings with Maple Buffalo sauce and toss until wings are completely coated with sauce.
  • Place wings back in the air fryer for one minute or until crispy.
  • Remove wings from air fryer and serve with dressing on the side, if desired.

NOTE

Storage: Store any leftovers in an airtight container. Reheat in an air fryer at 360°F for 4 minutes if all the wings are not consumed the day of cooking. Keep wings no longer than 4 days.

Maple Buffalo Cauliflower “Wings”

INGREDIENTS

1 head fresh cauliflower, florets trimmed, rinsed and dried
½ cup Maple Buffalo Sauce
1/2 cup panko (japanese) bread crumbs
1/2 cup regular bread crumbs
1 tsp Maple Chipotle Rub
Ranch or Blue cheese dressing to dip

STEPS

  • In a large mixing bowl, add the cauliflower and pour the maple buffalo sauce over the top. Toss gently to completely coat cauliflower; set aside.
  • Using a zip lock bag, add panko bread crumbs, regular bread crumbs, and all seasonings; Shake to combine. Add about half of the coated cauliflower to the bag and toss/shake to coat the cauliflower. Using tongs, remove from the bag and place into the air fryer in a single layer. Repeat for the rest of the cauliflower. **Depending on the size of your air fryer, you may need to cook in 2 batches - do not overcrowd the bites!**
  • Cook at 400 degrees for 7 minutes. Remove tray and gently flip cauliflower or shake. Place tray back into unit and cook at 400 degrees for 5 more minutes. Remove and set aside. Cook second batch if needed.
  • Serve immediately with dressing, if desired

NOTE

** IF BAKING, use the same directions in terms of prepping and coating the cauliflower. Set the oven to 400 degrees F. Place bites on a parchment lined baking sheet. Cook for 15 minutes, then flip over. Cook 5-7 more minutes or until crispy. To crisp coating further, turn oven to broil on HIGH and broil for 1-2 minutes or until browned. Serve hot!

Maple Pulled Pork with Cecile Branon

INGREDIENTS

2 lb pulled pork
2/3 cup Barbecue & Grilling sauce
1 1/2 cup Chili Sauce
1/2 cup Vermont Maple Syrup
2 teaspoons Corse Black Pepper
4 tbsp Dry ground Mustard

Chewy Maple Cookies

INGREDIENTS

½ c shortening softened
1 c packed Brown Sugar(I used Maple Sugar)
1 large egg
½ c maple Syrup(robust would be the best choice, but any grade would work)
½ teaspoon Vanilla extract
1 ½ c All-purpose Flour
2 teaspoons baking powder
½ teaspoon salt(I did not add because I used salted butter)
1 cup sweetened shredder coconut(optional)

STEPS

In a bowl cream shortening and sugar. Beat in egg syrup and vanilla until well blended. Combine flour baking powder & salt; add to the creamed mixture. Stir in coconut. Drop by tablespoons 2 in apart onto greased or lined baking sheets. Bake 375 for 12 -15 minutes or lightly browned. Makes about 3 doz.

Peanut Butter Maple Cookies (left side of photo)

Chewy Maple Cookies

INGREDIENTS

1 c butter softened
½ c peanut butter
1 c sugar – (I used Maple sugar here)
1 c packed brown sugar
2 large eggs
1 tablespoon Maple Syrup
2 teaspoons vanilla extract
2 c All-purpose flour
¾ c Quick-cooking oats
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 package (10 oz peanut butter chips

STEPS

In a large bowl cream butter, peanut butter, and sugars. Add the eggs, one at a time, beating well after each addition, Beat in Syrup and vanilla. Combine flour, oats, baking powder, baking soda and salt; add to the creamed mixture. Stir in Peanut butter chips. Drop by heaping tablespoons 2 in. apart onto baking sheets. Bake 325 for 15-18 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

Scrumptious Hamburgers

INGREDIENTS

1 lb hamburger
3 tbsp Barbecue & Grilling Sauce
1/3 cup Shredded Sharp cheddar cheese
1/2 tbsp black pepper

STEPS

Cook on the grill for the tastiest burgers but the stove top will work. Cook slowly for best results.

Maple Apple Bars

INGREDIENTS

1 cup Vermont Maple Syrup
1 cup white sugar
1 cup vegetable oil
2 eggs
1 cup walnuts
2 cups unbleached flour
½ tsp baking soda
½ tsp salt
2 cups chopped apples
1 tsp vanilla

STEPS

Stir by hand when mixing. Do not use an electric mixer. Bake in a 9x13 pan, greased and floured. Bake at 350 for 1 hour. Cool - cut into bars.

INGREDIENTS

1 1/4 cups flour
1/3 cup sugar
1/2 cup softened butter

Combine flour and sugar, cut in the butter. Mix until mixture resembles coarse meal. Press mixture into a greased 9" pan. Bake 375 for 15 min.

2 beaten eggs
2/3 cup sugar
3/4 cup Vermont Maple Syrup
2 tablespoons flour
1/4 teaspoon salt
2 tablespoons melted butter
1 1/2 teaspoons vanilla
1 cup chopped walnuts

Combine ingredients and beat well. Add nuts. Pour filling over prepared crust. Bake about 25 minutes at 350 or until firm. Cool and cut into squares.

Maple Dream Bars

Maple Dream Bar

INGREDIENTS

First Layer:

2 cups flour
1 cup chopped walnuts
2 sticks butter (melted)

Pat into bottom of a 9x13 pan. Bake 350 for 20 min - cool

Second Layer:

1 cup confectioners sugar
1 8oz cream cheese (room temp)
1 8oz cool whip (non-dairy topping)

Mix and spread on top of first layer.

Third Layer:

3 cups Vermont Maple Syrup
3 eggs
1/2 cup water
2/3 cup flour
1/2 tsp salt
2 tablespoons butter

Put syrup in a 2 quart sauce pan and warm. Combine and beat thoroughly eggs, water flour and salt. mix into syrup and cook in double boiler or heavy gauge bottom pan until it boils, stiring with whisk all the while to prevent sticking. Remove from heat and add butter. Let cool. Spread on second layer.

Fourth layer:

Spread 1 -8oz cool whip or non-dairy topping on top!
